Can an employer require an employee to work in excess of 100 hours a week with no day off afterwards if he earns above R90 000 a year?  Employee earns R120 000 gross and is not Senior Management. The employee does not want to make an issue for fear of losing his job. He is on probation. What recourse is there if it is unlawful? Who can it be reported to?

Both amounts mentioned are still well under the threshold. The time mentioned far exceeds the limits set by the Basic Conditions of Employment Act.
